In a blender, blend oats into a fine flour (if not using oat flour).Add protein powder, baking powder, and cinnamon. Mix well.In a separate bowl, mash the banana and whisk in the eggs, milk, and vanilla extract.Combine wet and dry ingredients, stirring until smooth. Let the batter rest for 5 minutes.Heat a non-stick pan over medium heat and lightly grease with coconut oil.Pour small amounts of batter into the pan and cook for 2-3 minutes until bubbles form.Flip and cook for another 1-2 minutes.Serve warm with fresh fruit, nut butter, or Greek yogurt
